Antimicrobial and Antioxidant activity of Fermented Bamboo Shoot Dendrocalamus hamiltonii

Bamboo is a perennial, woody grass, belonging to the Poaceae Family. Different bamboo species have been found therapeutic applications and studies shown that medicinal uses such as anti-cancer activity, anti-oxidant antimicrobial anti-diabetic anti-inflammatory anti-fertility activity antihypertensive. In this study, fermented was used for extraction of phytochemicals analysis their antioxidant activity. The extract characterized by FTIR. acetone methanol extracted yield 25.78% 31.08% respectively. scavenging with ascorbic acid showed 17.3 % 10 mg/ml whereas no acetone. But
